bay breeze
A close relative of both the vodka-cranberry Cape Codder and Sea Breeze—in fact, likely created in the same midcentury marketing push by Ocean Spray and the Cranberry Growers Association—this vodka cocktail (although some will tell you it can also be made with coconut-flavored rum) achieved peak popularity in the 1980s and remains a summer staple nearly a half-century later. The reason? As easy to make as it is to drink, the simple combination of vodka and cranberry and pineapple juices is as refreshing as the breeze that blows on a seaside veranda.

Ingredients
1 1/2 ounces vodka
3 ounces cranberry juice
1 1/2 ounces pineapple juice
Garnish: lime wheel
Steps
Fill a highball glass with ice.
Add the vodka, cranberry juice and pineapple juice and stir briefly to combine.
Garnish with a lime wheel.

the old fashioned
The most classic of all bourbon cocktails, the Old Fashioned has been around for more than 200 years. Its staying power owes to its simplicity: Little more than a slug of whiskey, seasoned and sweetened with Angostura bitters and sugar, the drink is more special than a neat pour, but nearly as easy to enjoy.

Ingredients
1 teaspoon sugar
3 dashes Angostura bitters
1 teaspoon water
2 ounces bourbon (or rye whiskey, if preferred)
Garnish: orange twist
Steps
Add the sugar and bitters into a mixing glass, then add the water, and stir until the sugar is nearly dissolved.
Fill the mixing glass with ice, add the bourbon, and stir until well-chilled.
Strain into a rocks glass over one large ice cube.
Express the oil of an orange twist over the glass, then drop into the glass to garnish.

JET PILOT
The Test Pilot was the creation of Donn Beach, the godfather of Tiki himself. Inspired by his travels in the South Pacific, Beach opened his bar Don the Beachcomber in Los Angeles as Prohibition was winding down in 1934, ushering in a new rum-soaked era of cocktail history best encapsulated by his motto: “If you can’t get to paradise, I’ll bring it to you.” He invented the Test Pilot around 1941, combining a blend of rums, Cointreau, falernum, lime juice, Angostura bitters, and Pernod with crushed ice in a blender. Many quirky Jet Age variations took off, including the Astronaut and the Space Pilot, but perhaps the most well-known is the Jet Pilot, which was invented in 1958 at the now-shuttered Beverly Hills hotspot.

Ingredients
1 ounce overproof Jamaican rum
3/4 ounce overproof demerara rum (such as Plantation OFTD)
3/4 ounce gold rum
1/2 ounce grapefruit juice, freshly squeezed
3/4 ounce lime juice, freshly squeezed
1/2 ounce cinnamon syrup
1/2 ounce falernum
1 dash absinthe
1 dash Angostura bitters
Garnish: maraschino cherry (and more, if desired)
Steps
Add all ingredients into a blender with a cup of crushed ice and blend on high until combined but not smooth, about 5 seconds.
Pour into a double old fashioned glass.
Garnish as desired.

classic vodka martini

0.25 oz Dolin Dry Vermouth
Lemon twist or olives for garnish Ice
Method:
Combine all ingredients in a shaker filled with ice.
Shake vigorously to chill and combine
Strain into a chilled martini glass
Garnish with a lemon twist or olives.

haitian divorce Rum
It’s essentially an Old Fashioned riff and is perhaps the best-known member of a series of matrimonially themed drinks that came out of the bar Beagle co-owner and beverage director Dan Greenbaum created a drink with a split base of bourbon and calvados that employed pedro ximenez sherry as a sweetener, which he dubbed the Second Marriage.

1 1/2 ounces Pilot’s Rum Rum
3/4 ounce mezcal espadín
1/2 ounce pedro ximenez sherry (preferably Lustau)
2 dashes Angostura bitters
Garnish: orange twist

Method:
Add all ingredients into a mixing glass with ice and stir until well-chilled.
• Strain into a rocks glass over one large ice cube.
• Express the oils from an orange twist and a lime twist over the drink, then drop both twists into the glass.

paper plane whiskey
Bourbon and lemon juice are mainstays in most home bars. Aperol, as the backbone of the popular Aperol Spritz, is easy to come by. Amaro Nonino is a friendly, bittersweet ingredient that adds a unique element to the cocktail. This liqueur is made from a base of grappa and includes notes of botanicals, alpine herbs and orange peel.

3⁄4 oz Amaro (e.g. Nonino Quintessentia)
3⁄4 oz Bittersweet orange-red aperitivo
3⁄4 oz Lemon juice (freshly squeezed)
Method:
Add the bourbon, Aperol, Amaro Nonino and lemon juice into a shaker with ice and shake until well-chilled.
